eventhough i'm not irish (russian/austrian - how's that for a combo?), we always have corned beef and cabbage on st. patrick's day. but the main reason for cooking that meal is to have leftovers for corned beef hash a few days later BigGrin

. just wondering if any else feels that way? i like thanksgiving dinner for the same reason. while the dinner itself and all the fixin's are yummy, we really look forward to "turkey burgers" the next day. i take leftover turkey and stuffing and put them thru my food grinder, then add an egg and some leftover gravy or broth, form them into patties and brown them in a pan. yikes! i'm getting hungry for them as i type w00t

. even if i don't see them for weeks at a time, my adult children ALWAYS show up when "turkey burgers" are on the menu at mom's! i'm not a "leftover" lover, but these two meals are the exception. just some ramblings . . . sue p.s. i miss the warm weather Cool

I LOVE Corned Beef & Cabbage...dipped in French's Yellow Mustard...and please do not forget the red potatos... For the left overs, Corned Beef on Rye BigGrin Now you are making me hungry.
